The secret to prepare the dumplings lies not only in the potatoes (which must be old, no matter if yellow or red) but also in the dough, that should not be kneaded too hard, in order not to risk that it becomes too hard. And then, of course, there is the sauce: it must be prepared carefully and without haste, as tradition dictates.
- First of all, we need to prepare the meat sauce with sautéed extra virgin olive oil, white wine, minced meat and tomato.
- To make a good sauce, mix the ingredients perfectly and cook them for at least half an hour.
- Meanwhile, we prepare the dumplings. Their preparation is simple: wash and boil the potatoes, then mash them and add the flour and an egg.
- Work the dough by mixing the ingredients and you will get the dumplings, that must be left rest for about twenty minutes before cooking.
